Crab-Potato Bake

10 large potatoes
butter
salt
1 1/2 - 2 lbs. imitation crab flakes
2 1/2 c. sour cream
4 eggs, well beaten
1/3 c. chives, chopped OR green onions
1/3 c. bell pepper, chopped

Bake @ 375 degrees about 30-40 minutes. Scoop out centers of potatoes. Combine potato with remaining ingredients and fill potatoes. Bake until filling is firm on top but moist inside.
